Zucchini pancakes with avocado and bacon (* from the garden)
1 cup self-raising flour
1/2 tsp baking powder
1 egg
1 1/2 cups buttermilk
*1 zucchini grated
3 bacon rashers
*cherry tomatoes
1 avocado
* basil leaves
1/2 red onion
1 clove garlic
balsamic vinegar
Make a batter with the flour, baking powder egg and buttermilk. Add grated zucchini. Cook the pancakes and keep pancakes aside in a warm place. Cook bacon and keep aside.With the remaining ingredients, prepare a chunky salad. Assemble with pancake on bottom topped with bacon and salad.
I enjoyed this. It was light and fresh and could lend itself to many other flavour combinations.
Anyone else got a good pancake recipe that includes a zucchini? Did you make a zucchini pancake recipe today? If so tell all (but leave out the confessional). I have made plenty of fritters before with my zucchinis, a particularly nice one with dill and a fetta dipping sauce, but this is my first venture into zucchini pancakes.

Totally forgot shrove Tuesday :-( but enjoyed reading about adn seeing your yummy looking pancake. I turned my back for a day and almost caught a marrow, but I think it would just still qualify as a courgette. Same deal with Lebanese cucumbers which have been my most successful crop to date!

DeleteI'm very glad Miss 6's school came through with some pancakes as I completely forgot. I did use some coconut milk today though - that's pretty rich.
ReplyDeleteI must say that I don't usually 'observe' Pancake Tuesday or Shrove Tuesday. It just seemed like a great excuse to make a zucchini pancake. I wish I went to a school that offered up pancakes!

DeleteI did make some pancakes although I like to call them shroves. I did think for a minute or two that they might be nice with a spinach, zucchini and ricotta mix and baked. But I fancied soup (which didn't have any zucchini). So just the plain ol crepe with lemon and sugar, which were tasty. Yours look fabulous, might give it a go.
ReplyDeleteI love plain old crepes with lemon and sugar. They are a regular on our Sundau morning breakfast menu. I like the idea of ricotta and zucchini and a herb in this pancake.
